one week plant-based challenge

Hello, and welcome to the plant-based “diet” adventure! I am so excited to have you on this journey with me. I hope you will find it inspiring, beneficial, and a step in the right direction in taking charge of your health and wellbeing. *I put the word diet in quotations because 1) I don’t like the connotation of that word — diet is simply what you eat. But for the purposes of this challenge, I will refer to it as a diet and 2) this is not a fad-diet, but what I believe to be a purposeful lifestyle choice for preparing and eating foods, and I am not suggesting it to be a use for any specific reason or ailment.*

First of all, I just want to say that this challenge is in no way a pressure for you to transition to a plant-based lifestyle. Rather, it is a tool and guide for you to use if 1) you are interested in making the switch to a plant-based diet and/or 2) you just want to add some variety to your family meals and want to incorporate more plant-based options into your recipe box.

Secondly, I understand that everyone’s daily life is different. Some of us stay at home with children, some of us work from home, and some of us work outside of the home. My goal is to provide you with simple (as in not too many ingredients) and easy recipes/meals to make, regardless of your occupation.

Lastly, I will be sharing recipes, ones that we use often and enjoy, and they may be our own or from a specific site. I will be sure to indicate the source of the recipe when I share them with you.

Let’s get started!

My story

As you may recall from a post earlier this year, I shared why and how our family transitioned to a plant-based diet. It has been almost six months since our transition and we are super pleased with the benefits we have received! We have more energy now, we’ve lost weight (we did NOT transition for weight loss reasons), our skin is clearer, and we just feel better overall. These benefits cannot be ignored, and we feel more compelled now than ever before to continue following this diet.

Why are you participating in this challenge? Why a plant-based diet?

Now I want to know why you are here! Why are you interested in a plant-based diet? How much do you know about this way of eating? Have you already started implementing more elements of this diet into your lifestyle? Why are you participating in this challenge? What do you want to gain from this challenge (support, community, information/stats, references/resources, etc.)?

Format of challenge

For this challenge, I will be sending out this introductory newsletter, as well an additional newsletter a week or two before your adventure begins. The second newsletter will contain your meal plan for the week as well as the grocery list for your meals.

I want to keep this challenge an open platform, as I anticipate questions and feedback throughout the week. Therefore, I will have a daily check-in post, where you can ask your questions and give feedback, not only to myself, but to those others who are participating in the challenge with you! It’s important to have support and community during a transitional period and so I want this to be a positive and informative platform for that reason.
