Dear QHA Readers,
Happy August! I can’t believe we are this far into the year already! Before we know it, we will be cozied up in our homes while the snow lightly falls outside and we’ll be celebrating Christmas with loved ones. I’m definitely not ready for winter or the end of the year yet, but I sure could use a little break from this summer heat.
I wanted to send you an update in regards to the one week plant-based challenge. Don’t worry, I haven’t forgotten about it! I was hoping to have the challenge this week, 8/5-8/11, but last week I was busy celebrating birthdays (my now 4 year old included), and, to be honest, it has taken a lot longer for me to gather everything together than I thought! While working on your meal plan and grocery list, I realized just how detailed I need to be and so I want to make sure I send you a complete and thorough post filled with everything you need to know to have a successful week.
All that being said, I have decided to “hold” the challenge Aug 19-Aug 25 (I will send out your meals + grocery list early next week). I hope this week works well for everyone. Some of you may be sending your kids to school that week (me included!), so it may be a helpful tool for you to use that week (your meals + groceries already planned for you). Also, I wanted to mention that while this is a one week challenge, feel free to participate in as much of it as you want — whether that is the whole week, just a day or two, or just Wednesday — it’s totally in your hands!
Enjoy the last few weeks of summer! I’m trying my darnedest to soak up these last couple of weeks as much as I can before I send my four year old off to preschool. I can’t believe summer is almost over and my first baby is already old enough to go to school! 😦
