Plant-Based Challenge || Check-In

Dear Quiet Home Adventurers,

We are halfway through the plant-based challenge! How is it going? How are you feeling?

I hope that this “challenge” has been easygoing and rewarding. Of course, little hiccups are bound to happen with any sort of transition period, but I believe in you and your effort does not go unnoticed!

Now that we are halfway through the one week challenge, I thought I would pose a few questions for you to consider, to get you conversing and connecting with your fellow participants. I will weigh in on these questions too, so look for my answers below in the comments.

Challenge questions:

  1. How well have you been enjoying the food? Are you eating items that you haven’t tried before?
  2. Have your meals been easy to prepare? Do you enjoy prepping them or wish for more convenience?
  3. What foods, meals, or preparations do you like? What don’t you like?
  4. How has your spouse/family reacted to the meals? Have they gotten involved in meal planning, grocery shopping, or preparing the meals?

    Here are my answers to the questions above:

    1. When I transitioned to a plant-based diet, I really enjoyed the food. I was beginning to eat items that I hadn’t tried (or prepared) before, but everything was so delicious. I really liked that the recipes got me outside of my “taste-buds” box!
    2. Mostly, the meals have been easy to prepare. These days, with tending to the home while running around after two children, I need recipes that don’t take a lot of time to make. And I am not at all a professional cook, so if a recipe is simple enough for me to make and I have most of the ingredients in my cupboard, then it’s a keeper!
    3. I really like all of the meals on this challenge (hence why I chose them 😉 ), but a few of my favorite recipes are: chunky monkey breakfast bowl, tacos (of any sort), veggie fajitas, tofu scramble, and apple oat pancakes (I really love breakfast food…and Mexican food too, apparently 🙂 )
    4. When we first transitioned to a plant-based diet, my family was very accepting and willing to change. When you have delicious recipes, it’s hard to argue with them! The kids have handled the transitioned far better than I imagined, but I think that’s because of the bright colors they are seeing and the fact that we can still enjoy a lot of comfort foods (like pancakes, tacos, and ice cream) just the same without dairy!
